Menu Plan Monday: Getting ready for back-to-school edition
Just like last week, I've planned three dinners that can be served any night this week. With an almost-18 year old and a 16-year old, dinner isn't simple any more!
Night one:
Turkey Burgers on Grill [postponed]
Sweet Potato Fries on Grill [postponed]
(roast red peppers on grill for later)
Night two:
Biscuits and Sausage Gravy (by request)
Night three:
Tuna Rolls (by request)
Roasted Red Pepper Salad [4-5 red peppers roasted, skin removed and sliced. 1 clove garlic, minced. 2 T balsamic vinegar mixed with 5 T olive oil, salt/pepper. Marinade overnight at least]
Some form of potato
I'm also planning to use this weekend to get a little ahead of the back-to-school game by making (for the freezer):
Breakfast burritos
Homeade "nutrigrain bars"
These granola bars
And, maybe some homemade pop tarts (never made those before) and some quiche muffins like these or these

Thanks for visiting my blog! I see you are also an adoptive mom. I watch extensively about my experiences over the last 12 years since we adopted. Lots of ups and downs. Have a great day! And yes, we homeschool, too.
Hmmm, I might have to try those pop tarts with gluten free flour. My girls really miss having pop tarts.
