With a 16 and an 18 year old summer meal planning just isn't worth it! But with only 3 weeks to go till school starts, I thought it was time to "sort of" plan some meals. I've planned 3 meals for this week and have some "options" in mind for other nights when I'm alone or their are only two of us.

Sweet Potato Oven Fries (toss with olive oil & cayenne pepper)

Wow. That Korean Beef looks delicious! I was thinking you would have to use steak, but to be able to used ground beef makes it so easy.
The nutella rice krispy treats look good, too. I really shouldn't be looking at these things. I am on a diet, but next week is vacation week, so....

The chicken salad sounds delish! Not sure all my family would eat it, but I may make it up just for me :) Nutella treats YUM -- but a jar of Nutella rarely lasts over an hour or two here - seriously! I felt a bit more like menu planning this week as well ... hmmm ... does that mean fall is coming??? I can imagine how hard it is planning with a 16- and 18-yr-old, since I'm finding it increasingly difficult.

I made the Korean Beef last night and it was a big hit! I loved it because it was so easy to make (I'm not eating meat during the week, but I did take a small taste - yum!).
The boys loved it. Of course, they decided they wanted to have it in a wrap like a burrito - rice and all.
Anyway, this will definitely go into the rotation.
