Menu Plan Monday
We're coming off our Easter candy and other sweets high this week!
Porcupine Meatballs (60's fave!) [1lb ground beef, 1/3 c uncooked rice, a little onion, s/p, 1 egg--make meatballs, brown then add 1 16 oz tomato sauce and some Worchestershire Sauce and cook till sauce thickens a little. You can use a can of tomato soup instead.] I haven't updated this recipe--it's the original!
Roast Chicken in the Crock Pot from the French Slow Cooker
Ham and Hash brown Casserole [Left over ham--diced; pkg frozen shredded hashbrowns, some melted butter, a small onion diced, can of low fat cream of chicken soup, small low-fat sour cream and a package of shredded colby cheese--mix and bake. We like a good bit of pepper in this too! On top put Corn Flake crumbs sauted in a little butter and let them brown on top in the oven.]
