Menu Plan Monday

I've gotten away from Menu Plan Monday for a few weeks and does it show at home!!! Grumbly family, no "real" food in the house! I took care of the situation by planning menus and shopping this weekend. Back to normal!



Saturday: (My 50th birthday dinner)
Nachos with homemade guacamole****

Sunday: (long-neglected "Family Movie Night")
Potstickers (frozen)
Egg Rolls (frozen)
Fresh Raspberries

Monday:
Cilantro Beef (postponed so long I've twice bought cilantro for it!)

Salad
Fruit

Tuesday:
Straganoff (fresh mushrooms were on sale!) [Note: link is not my exact recipe, but very close--add 1 clove of minced garlic or more to taste.]
Noodles
Strawberry Smoothies


Wednesday:
Spicy Pepper Penne (by request)
Garlic Bread
Salad

Thursday:
Spinach-Sausage Calzone *****
Peas and Mushrooms
Fresh Pineapple


Friday:
Buffalo Chicken Chili (by request)
Ranch Coleslaw
Corn Muffins
Fruit

Recipes:

Guacamole

2 or 3 ripe Haas Avocados
Up to 1/4 cup finely minced red onion
2-4 cloves of garlic (depending on size) finely minced
A few drops of hot sauce (I use Louisiana brand)
1T each sour cream and mayo

Mash the avocaoo (leave some texture though!) with the other ingredients and let sit for a little while in the fridge.

Sausage-Spinach Calzone:

1 batch pizza dough OR fully thawed frozen bread dough OR 1 Pillsbury Hot Loaf
1 lb sausage--cooked
1 bag Mozerrella cheese
Several handfuls of "salad" spinach (or thawed, squeezed dry box of frozen)

Pat/roll pizza dough, top (down the middle in a line) with cooked sausage, then spinach, then cheese on. Make a "loaf" securely sealing in the filling and bake till lightly browned.

Note: Frozen bread dough you have to roll out and it can be messy!! Pillsbury dough: Look for the "seam" in the dough and carefully, gently unroll it and then fill, etc.

Happy, happy birthday!!! I love that you have "straganoff" -- that's the way we always said it when I was growing up. It was my dad's favorite ;)
