Frugal Food Series: Favorite Frugal Egg Recipe


For us that would be FRIED RICE! Here are the basics:

1 1/2 cups (uncooked measure) rice boiled and cool/cold.
1/2 cup onion or equivalent dried onion soaked in a little water
1 clove garlic minced or equivalent garlic powder
4--5 T soy sauce
1/2 small package of frozen peas or peas and carrots
1/4--1/2 small cabbage sliced (or 1/2 bag of coleslaw mix)
2-3 green onions chopped
2-3 eggs beaten
(optional: left over meat of any kind &/OR any other veggies you like)

Heat a large non-stick skillet or well-seasoned wok till hot. Add 2 T (or more depending on your skillet/wok) canola or other oil (or shortening) add onion--stir fry quickly and remove. Now add the cold rice and stir fry for a few minutes (my stove doesn't get super hot so it takes SEVERAL minutes for me!) . You may need to do 1/2 the rice in one batch, then the other 1/2. Add the onions back in, add the garlic, then pour the beaten eggs over the rice and stir constantly till they are cooked thru. Sitr in the soy sauce. (Add this to your own taste.) Serve topped with chopped green onions. (My son and I like this with Thai Chili Garlic Paste in it for heat!) You can't make this "wrong"--anything works in it. After Thanksgiving I use left over turkey and brown rice. It's an amazing flavor.

I make extra rice whenever we are having rice and freeze it. It's perfect for fried rice or you can microwave it for 3 minutes and it's almost as good as fresh.

Becky--when I had a big freezer I did that a lot. Today I only have the top of the fridge freezer.
